Spring Veggies and Pasta

We’ve all been there. Lunch time is in 20 minutes and we have no idea what we’re going to make. Pasta to the rescue!


Ingredients:
1 box whole wheat pasta (I like spirally pasta)
1 brick tofu
1 Tbsp olive oil
2 zucchinis, sliced
1-2 Tbsp fresh parsley
salt to taste
Pasta sauce

Directions:
Boil pasta according to the directions. While the pasta is boiling, cube tofu and fry up with oiled pan (I just use olive oil Pam spray), and dust with McKay’s chicken seasoning. In a separate frying pan, warm oil and steam zucchini with lid over medium low heat for 6-10 minutes. Add parsley, and sprinkle salt to taste. Warm tomato sauce in another pan. Serve pasta with tomato sauce and tofu, with zucchini and salad on the side.
