Scrambled Tofu

I have been addicted to tofu for as long as I can remember. I loooove tofu. My mom is such a pro at making it, that I imagine it is due to her awesome touch that I have such an affinity towards it. This recipe is very versatile. It can be served on its own with toast, potatoes, in a breakfast burrito, or on a arepa. Be creative and add spinach, mushrooms and broccoli!


Ingredients:
1 brick tofu
1 Tbsp cooking oil
1/2 onion, diced
1/4 tomato, diced
1 Tbsp McKay’s Chicken Seasoning
1 tsp onion powder
1/2 tsp garlic powder
1/4 tsp dried basil
1/8 tsp salt (optional, omit if aiming for low sodium diet)
1/2 tsp turmeric (optional, gives a nice flavor and color)

Directions:
Saute onion and tomato in oil until onion is translucent (don’t burn). Add tofu and crumble onto pan. Add seasonings and mix well over low-medium heat. This dish is delicious as leftovers as well.
