Gingersnap Muffins

Ever heard of a gingersnap muffin? I hadn’t either! These little muffins are super yummy, and full of great nutrition!

Yields 12 muffins
1 cup whole wheat flour

1 cup white flour

1 tsp baking soda
1/4 tsp salt
1/2 tsp cinnamon
1/2 tsp ground ginger
1/4 cup canola oil
1/4 raw cane sugar
2 Tbsp ground flaxseed (or chia seeds) + 6 Tbsp water
1/2 cup molasses
1/2 cup raisins
1/2 cup soy milk

Combine flaxseed and water and set aside to coagulate. This is your “egg”. Mix together all of the ingredients and add just enough water to make it the right consistency. Pour into 12 muffin tins and bake at 375 degrees for 20 minutes.
