Berry Muffins

Muffins are a favorite food in our home. A light supper of fresh muffins and a cup of soymilk is sometimes the perfect way to end the day. Enjoy these juicy blueberry muffins!


Ingredients:
¼ cup vegetable oil 
½ cup unsweetened applesauce 
½ teaspoon salt 
3/4 cup granulated sugar 
1 cup all-purpose flour 
1 cup whole wheat flour 
1 tablespoon baking powder 
½ cup soymilk 
2 cups blueberries (You can use fresh or frozen) 
Preheat oven to 350F. Line muffin cups with paper liners, or spray with cooking spray. Mix all ingredients together in mixing bowl, saving the blueberries until the rest of the dough is well incorporated. Spoon into muffin cups, filling three-quarters full. Bake 35 minutes, or until tops are firm. Cool slightly on rack. Yields 1 dozen.
